Our story
We’re a bakery guided by the principle: “simple things made well.”
Since opening our first shop in 2015 over 10 years ago, we’ve baked sourdough bread and pastries daily—creating honest food and everyday staples using seasonal, sustainably sourced ingredients from independent growers and producers.
Our bakery is built on the values we’ve held from the very beginning: to bake with purpose, to nourish our community, and to support the people and places behind the ingredients we use.
Over the years, we’ve been fortunate to grow alongside a wonderful community of customers, staff, and producers. What began with a tiny team in one small shop—working seven days a week to produce just a handful of breads and pastries—has grown into something much bigger. We now receive several tons of flour each week, with a team of over 80 people helping us bake for our shops and serve multiple communities across Edinburgh and the Scottish Borders.
Along the way, we’ve had the privilege of sharing our story in our debut cookbook, Kitchen Table, published with HarperCollins. It celebrates our journey, our producers, and the bakery itself—with recipes to help you make the most of beautiful ingredients and the knowledge we’ve gathered over the years.
